- In a small mixing bowl, whisk together the soy sauce, oyster sauce, chicken broth, brown sugar, and cornstarch. Stir vigorously until no lumps remain.
- Heat a large wok or skillet over medium-high heat and add 1 tbsp (15ml) of cooking oil. Add the plump shrimp in a single layer and sear for 1-2 minutes per side until pink. Remove to a plate.
- In the same wok, add the remaining 1 tbsp (15ml) of oil and the broccoli florets. Toss for 1 minute, add 2 tbsp (30ml) of water, cover with a lid, and steam for 2 minutes until vibrant emerald green.
- Push the broccoli to the edges of the pan. Add the minced garlic and ginger to the center, sautéing for 30 seconds until deeply fragrant.
- Whisk the sauce mixture one final time, then pour it into the wok. Simmer for 1-2 minutes until thick and glossy. Return the shrimp to the wok and toss to coat beautifully.
- Transfer the stir-fry to a serving bowl. Garnish with sesame seeds, finely chopped parsley, and red chili flakes.
Notes
Dry the Shrimp: Pat your shrimp completely dry with paper towels before cooking to ensure a proper sear.
