Ingredients
  

Stir-Fry Ingredients
  • 1 lb Large Shrimp (450g), peeled and deveined
  • 4 cups Broccoli Florets (300g), cut into bite-sized pieces
  • 2 tbsp Cooking Oil (30ml), canola or vegetable oil, divided
  • 1 tbsp Fresh Garlic (9g), minced
  • 1 tsp Fresh Ginger (3g), minced
  • 3 tbsp Low-Sodium Soy Sauce (45ml)
  • 2 tbsp Oyster Sauce (30ml)
  • 1/2 cup Chicken Broth (120ml)
  • 1 tbsp Brown Sugar (12g)
  • 1 tbsp Cornstarch (8g)
  • 1 tsp Sesame Seeds (3g), for garnish
  • 1 tbsp Fresh Parsley (4g), finely chopped
  • 1/2 tsp Red Chili Flakes (1g), for garnish

Equipment

  • 1 Large Wok or Skillet Essential for high-heat cooking and searing the shrimp.
  • 1 Small Mixing Bowl Needed to whisk the glossy brown sauce and cornstarch.

Method
 

Cooking Process
  1. In a small mixing bowl, whisk together the soy sauce, oyster sauce, chicken broth, brown sugar, and cornstarch. Stir vigorously until no lumps remain.
  2. Heat a large wok or skillet over medium-high heat and add 1 tbsp (15ml) of cooking oil. Add the plump shrimp in a single layer and sear for 1-2 minutes per side until pink. Remove to a plate.
  3. In the same wok, add the remaining 1 tbsp (15ml) of oil and the broccoli florets. Toss for 1 minute, add 2 tbsp (30ml) of water, cover with a lid, and steam for 2 minutes until vibrant emerald green.
  4. Push the broccoli to the edges of the pan. Add the minced garlic and ginger to the center, sautéing for 30 seconds until deeply fragrant.
  5. Whisk the sauce mixture one final time, then pour it into the wok. Simmer for 1-2 minutes until thick and glossy. Return the shrimp to the wok and toss to coat beautifully.
  6. Transfer the stir-fry to a serving bowl. Garnish with sesame seeds, finely chopped parsley, and red chili flakes.

Notes

Dry the Shrimp: Pat your shrimp completely dry with paper towels before cooking to ensure a proper sear.
Mise en Place: Stir-frying happens fast. Have all ingredients chopped and sauce mixed before cooking.
