Ingredients
  

  • 1 thick slice Sourdough Bread or other rustic bread
  • 1/3 cup Full-Fat Cottage Cheese small curd recommended
  • 1/2 cup Cherry Tomatoes halved
  • 1 tsp Extra Virgin Olive Oil for drizzling
  • 1 tbsp Fresh Basil chopped or torn
  • Flaky Sea Salt to taste
  • Freshly Cracked Black Pepper to taste
  • 1 tsp Balsamic Glaze optional, for drizzling

Method
 

  1. Toast your slice of sourdough bread until golden brown and crispy using a toaster, pan, or broiler.
  2. While the bread toasts, slice the cherry tomatoes in half and gently chop or tear the fresh basil leaves.
  3. Spread the cottage cheese in an even layer over the warm toast.
  4. Arrange the halved cherry tomatoes on top of the cottage cheese. Drizzle with olive oil and optional balsamic glaze.
  5. Sprinkle with fresh basil, flaky sea salt, and black pepper. Serve immediately.

Notes

Tip 1: For an extra creamy texture, whip the cottage cheese in a small food processor for 30 seconds before spreading.
