  • 1 cup Cottage Cheese 2% or full-fat recommended
  • 1/2 English Cucumber finely chopped
  • 1 cup Cherry Tomatoes halved
  • 1/4 Red Onion thinly sliced
For the Simple Vinaigrette
  • 1 tbsp Extra Virgin Olive Oil
  • 1 tbsp Lemon Juice freshly squeezed
  • 1 tbsp Fresh Dill chopped
  • 1/4 tsp Salt or to taste
  • 1/8 tsp Black Pepper or to taste

Method
 

  1. Start by washing and drying your produce. Halve the cherry tomatoes, finely chop the English cucumber, and thinly slice the red onion.
  2. In a small bowl, whisk together the extra virgin olive oil, fresh lemon juice, and chopped fresh dill. Season with salt and black pepper to your liking.
  3. In a medium-sized bowl, gently combine the cottage cheese, halved tomatoes, chopped cucumber, and sliced red onion.
  4. Pour the vinaigrette over the cottage cheese and vegetable mixture. Stir gently until everything is well-coated. Serve immediately for the best texture.
