- In a large bowl, stir together the dry instant pistachio pudding mix and the undrained can of crushed pineapple until the pudding mix is fully dissolved.
- Gently fold in the thawed whipped topping, mini marshmallows, and chopped pecans until just combined. Do not overmix.
- Cover the bowl and refrigerate for at least 1 hour, or until well-chilled, to allow the flavors to meld.
- Garnish with maraschino cherries just before serving, if desired.
