Watergate Salad: The Classic Pistachio Fluff Recipe

Ingredients
  

  • 1 package (3.4 oz) instant pistachio pudding mix Do not use cook-and-serve.
  • 1 can (20 oz) crushed pineapple undrained
  • 1 container (8 oz) frozen whipped topping thawed
  • 2 cups miniature marshmallows
  • 1 cup chopped pecans Walnuts also work well.
  • 1/4 cup maraschino cherries for garnish, optional

  • 1 Large Mixing Bowl
  • 1 Spatula

Method
 

  1. In a large bowl, stir together the dry instant pistachio pudding mix and the undrained can of crushed pineapple until the pudding mix is fully dissolved.
  2. Gently fold in the thawed whipped topping, mini marshmallows, and chopped pecans until just combined. Do not overmix.
  3. Cover the bowl and refrigerate for at least 1 hour, or until well-chilled, to allow the flavors to meld.
  4. Garnish with maraschino cherries just before serving, if desired.

Notes

Tip 1: For best results, use chilled ingredients as it helps the salad set faster.
Tip 2: Feel free to make this salad a day in advance; the flavors get even better overnight.
Tip 3: If you have a nut allergy, the pecans can be omitted without any other changes.
