Ingredients
  

  • 6 cups seedless watermelon chilled and cut into 1-inch cubes
  • 1 cup feta cheese crumbled from a block
  • 1/2 cup fresh mint leaves roughly chopped or torn
  • 1/2 cup cucumber peeled and thinly sliced
  • 1/4 cup red onion thinly sliced
  • 2 tbsp extra virgin olive oil
  • 2 tbsp fresh lime juice from about 1 lime
  • 1/4 tsp sea salt or to taste
  • 1/4 tsp black pepper freshly ground, or to taste

Method
 

  1. In a large serving bowl, combine the cubed watermelon, crumbled feta cheese, sliced cucumber, and thinly sliced red onion.
  2. In a separate small bowl, whisk together the extra virgin olive oil and fresh lime juice. Season with sea salt and black pepper to taste.
  3. Pour the lime vinaigrette over the watermelon mixture. Add the fresh mint leaves and toss gently to combine. Serve immediately for the best texture and flavor.

Notes

For the best flavor, use a block of feta packed in brine rather than pre-crumbled varieties.
To prevent a watery salad, assemble and dress it just before serving.
