  • 2 lbs ground beef (80/20 or 85/15 recommended)
  • 1 cup shredded sharp cheddar cheese, divided
  • 1/2 cup shredded mozzarella cheese
  • 1 cup plain breadcrumbs
  • 1 small yellow onion, finely chopped
  • 2 cloves garlic, minced
  • 2 large eggs, lightly beaten
  • 1/2 cup whole milk
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried thyme
For the Simple Tangy Glaze
  • 3/4 cup ketchup
  • 2 tablespoons brown sugar
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon onion powder
For the Creamy Mashed Potatoes
  • 3 lbs Russet potatoes, peeled and quartered
  • 1/2 cup unsalted butter, softened
  • 1/2 cup heavy cream, warmed
  • 1/2 cup whole milk, warmed

Method
 

Prepare the Mashed Potatoes
  1. Place peeled and quartered potatoes in a large pot and cover with cold, salted water. Bring to a boil and cook for 15-20 minutes, or until fork-tender.
  2. Drain well and return to the hot pot for a minute to evaporate excess moisture. Mash until smooth.
  3. Add softened butter, warmed heavy cream, and milk. Stir until creamy. Season with salt and pepper, then cover to keep warm.
Make and Bake the Meatloaf
  1. Preheat oven to 375°F (190°C).
  2. In a large bowl, gently combine ground beef, 1/2 cup cheddar cheese, breadcrumbs, onion, garlic, eggs, milk, Worcestershire sauce, salt, pepper, and thyme. Do not overmix.
  3. Shape the mixture into a 9x5-inch loaf on a parchment-lined baking sheet. Bake for 45 minutes.
Glaze and Finish
  1. While baking, whisk together ketchup, brown sugar, apple cider vinegar, and onion powder for the glaze.
  2. After 45 minutes, spread the glaze over the meatloaf. Return to the oven for 10 minutes.
  3. Sprinkle the remaining 1/2 cup cheddar and the 1/2 cup mozzarella cheese on top. Bake for an additional 5-7 minutes, until cheese is melted and bubbly and the internal temperature reaches 160°F (71°C).
  4. Let the meatloaf rest for 10 minutes before slicing and serving with the mashed potatoes.
