  • 2 English cucumbers Sliced into 1/4-inch half-moons
  • 1/2 red onion Thinly sliced
  • 1/2 cup fresh cilantro Roughly chopped
  • 1 jalapeño Finely diced, seeds removed for less heat
  • 1/3 cup crumbled Cotija cheese Feta can be used as a substitute
For the Dressing
  • 1/4 cup fresh lime juice From about 2 limes
  • 2 tbsp extra virgin olive oil
  • 1/2 tsp Tajín seasoning Or chili powder
  • 1/4 tsp salt Or to taste

Method
 

  1. In a large mixing bowl, combine the sliced cucumbers, thinly sliced red onion, chopped cilantro, and diced jalapeño.
  2. In a separate small bowl, whisk together the fresh lime juice, olive oil, Tajín (or chili powder), and salt until well combined.
  3. Pour the dressing over the vegetable mixture and toss gently to coat everything evenly.
  4. Just before serving, sprinkle the crumbled Cotija cheese over the salad and give it one final, gentle toss. Serve immediately for the best texture.

Notes

For the crunchiest salad, use well-chilled cucumbers and dress the salad just before serving.
To mellow the bite of the red onion, you can soak the slices in ice water for 10 minutes before adding them to the salad.
